Hi,
Is there a place or asset store where there are more skins to use. I am looking at creating a fighting game and looking for multiple characters (ninjas, soldiers, bosses etc), but it seems that I would need to become an artist (which I am not) and create all the body parts from scratch?

You may have more luck on platforms dedicated to selling assets such as the Unity Assets Store, Itch, and similar.
Probably the best thing would be to hire an artist, or if you're looking to do this as an exercise, join a game jam and offer to form a team on one of the platforms that host the game jam such as Ludum Dare, Itch, etc.
